Perfect Lemon Bars

Raise your hand if you think of zesty lemons when someone brings up summer! Read on for these perfect lemon bars:

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting

Directions:

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch square baking pan.
  2. In a medium bowl, combine flour, butter, and powdered sugar until the mixture becomes crumbly.
  3. Press the mixture into the bottom of the prepared pan and bake for 20 minutes, or until golden brown.
  4. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and salt until well combined.
  5. Pour the lemon mixture over the hot crust and bake for an additional 20 to 25 minutes, or until set.
  6. Cool the lemon bars completely in the pan before cutting into squares.
  7. Dust the tops with powdered sugar before serving.
